Operation of Tacos La Mas Fregona (Mobile Food Unit)
Tacos La Mas Fregona operates as a licensed mobile food unit from its designated site at 137 N Olympic Ave,Arlington,WA 98223.
The unit is managed under The Gutierrez and Family,LLC,and serves customers directlyfrom this location.All operational
procedures and site-specific activities are conducted in accordance with local regulations and guidelines to ensure the safety and
quality of food service.
Licensing and Insurance Compliance
Tacos La Mas Fregona operates under a valid Washington State Business License for the year 2026,as well as a current City of
Arlington Endorsement License.In addition,a Certificate of Insurance has been provided,listing the City of Arlington as an Additional
Insured party.These measures ensure regulatory compliance and demonstrate the commitment to meeting all necessary legal and
municipal requirements for operation.
Mobile Food Unit Operation Proposal
This proposal details the operations of my licensed mobile food unit,The Gutierrez and Family,LLC,doing business as Tacos
La Mas Fregona,which is located at 137 N Olympic Ave,Arlington,WA 98223.Please see agreement.
At this time,there are no additional locations being considered for parking the mobile food unit in Arlington.
Restroom and Hand-Washing Facilities
Employees will have access to an approved off-site restroom facility located within 500 feet of the site,as documented in the
Sales Site Agreement and permissions from Jim Dona[son and in compliance with Snohomish County Health Department
requirements.
Employees working at the sale site located at 137 N Olympic Ave,Arlington,WA 98223,will have access to a restroom
equipped with a plumbed hand-washing sink.
Access is provided via a secure code,allowing employees to enter the Donnelson's building and use the facilities as needed.
Customers are provided with restroom access,including a plumbed hand-washing sink,at LNP The Nail Collective,which is
conveniently located next door at 216 E 2"0 St,Arlington,WA 98223. Please see attached agreement.
To accommodate customers during operating hours,Tacos La Mas Fregona has established an agreement that provides
access to restroom facilities.Customers may utilize facilities located at the mentioned locations and,when necessary,
additional access is available at the American Legion Post 76,situated at 115N Olympic Ave,Arlington,WA 98223.This
arrangement ensures that all employees and customers have convenient access to essential amenities throughout the food
truck hours of operation.Please see attached agreement,
Commissary Kitchen Location
The commissary kitchen supporting the operation of Tacos La Mas Fregona is located at The Point Bar and Grit[,3528 168th
ST NE,Arlington,WA 98223.An agreement is in place with The Point Bar and Grit(,ensuring proper access and compliance
with requirements for the mobile food unit. Please see attached agreement.

• Wednesday:11:00 AM-6:00 PM
• Thursday:9:30 AM-6:30 PM
• Friday:9:30:00 AM-7:30 PM

• Sunday:11:00 AM-4:00 PM
Operational Hours Overview
The operational hours for Tacos La M6s Fregona are carefully structured to offer consistent service and meet the needs of the
local community.Throughout the week,the schedule will ensure the food unit is accessible to customers,with extended
hours on Fridays to address increased demand leading into the weekend.Sundays feature shorter hours,reflecting a lighter
volume while still providing service to patrons.
This schedule enables the business to serve both breakfast and dinner,responding directlyto customer requests and
positive feedback throughout the whole year regarding meal availability.The operational framework is designed to provide
reliability for staff and patrons alike,supporting the goal of maintaining a responsive,community-oriented mobile food
service.
There are several city sidewalks and public parking located on the street as well as additional public parking across the street
at Legion Park and on 1 rst E street.Additionally,there are pedestrian crossings to the north and northwest of the site,which
will reduce pedestrian hazards.The food truck does not have drive-thru traffic.
Seasonal and Holiday Adjustments
Operational hours may be shortened during the winter months and on certain holidays.These modifications are made to
accommodate changes in customer flow and demand during these periods.In addition,the schedule is subject to further
reduction if there is a significant decrease in customer activity.All adjustments are implemented to ensure efficient
operations while continuing to meet the needs of our community.
Utilities&Operational Details
Garbage disposal and sanitation practices will comply with all applicable Snohomish County Health District regulations.
Commissary Kitchen
The mobile food unit's commissary kitchen is located at The Point Bar and Grill,3528 168th St NE,Arlington,WA 98223.
Documentation of this agreement is on file.
Conclusion
This proposal is intended to provide a community-oriented mobile food service while maintaining compliance with
applicable zoning,health,and safety standards.The food truck will be removed at the end of each day.Tacos La M5s
Fregona has been operating successfully within the City of Arlington and remains committed to continued
compliance with all municipal regulations.

This letter confirms that Tacos La MJs Fregona, a licensed mobile food unit operating in Arlington, WA,
has authorized customers access to restroom facilities located next door at LNP The Nail Collective,
216 E 2nd St, Arlington, WA 98223.
The restroom includes a plumbed toilet, handwashing sink, soap and paper towels and is available for
customers use during the food truck's hours of operation in order to meet applicable health department
requirements.
This agreement does not establish any leasehold interest or change in property use classification and
is limited solely to restroom access for compliance purposes.
