Is the kitchen to be used to serve meals to customers or is it part of the brewing operation? If you are proposing to install a kitchen for serving of customers then you are changing the use of your business and with that comes some code issues. A brewing operation is considered an F-1 (factory/industrial operation) so when you originally applied there was no change of use and the Tenant Improvement was completed for an F-1. A restaurant/tavern is considered an A-2 (assembly) occupancy and has more code provisions than an F-1, i.e. more restroom requirements. 2. Also, because the original restroom was constructed out of wood it was considered to be existing non- conforming. Any new construction is regulated by the current code which does not allow wood framing to be used even when covered with FRT board. All framing would either need to be non-combustible or the wood framing coated with a fire-resistive material prior to cover. There is a product called No-Burn, which a local company can spray on. 1 have the contact information if you wish to go that route.
